Guinness Grilled Chicken
This Guinness Grilled Chicken is perfect for barbecuing during the summer or you can also grill it inside with a grill pan. The beer marinade tenderises and flavors ythe chicken, making it juicy and delicious.

- 4 chicken breasts boneless and skinless
Marinade
- 4 cloves garlic minced
- 2 tablespoons soy sauce
- Juice of 1 lime
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh parsley chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 10 oz bottle of Guinness beer (285ml)
In a large bowl or Ziplock bag combine the marinade ingredients.
Add chicken breasts and marinate for at least 1 hour or up to 8 hours, rotating the chicken if possible. Make sure to keep it in the refrigerator.
Preheat and oil the grill. Grill the chicken on both sides for 5-7 minutes or until golden.
Let the chicken rest for 5-10 minutes before slicing and serving.
- Chicken is fully cooked when a thermometer inserted into the thickest part of the chicken reads 75 degrees Celcius (165 degrees F).
- Chicken can also be cooked in the oven in a roasting pan for 15 to 20 minutes, by allowing the chicken breasts to soak in the juices instead of letting the juice fall into the fire.
- Keep your chicken from getting too dark by cooking it at medium heat and not directly over the hot coals.
- If you are worried about the alcohol content of the Guinness beer, use alcohol-free Guinness instead.
- While the chicken marinates, turn it occasionally for an even flavour.
- Instead of honey, you can substitute for sugar, simple syrup, or maple syrup.
